Mood Food Recipe: Delicious & Nutritious Veggie Soup

You are what you eat! 

Try out this homemade, easy-to-make, delicious vegetable soup that is jam-packed with nutritious and delicious ingredients. 

INGREDIENTS:

1 yellow onion, chopped
4 cloves of garlic, peeled and minced 2 cans of petite diced tomatoes
1 can of green chiles
1 yellow squash, diced
1 zucchini, diced
2 cups of corn
6 cups of low sodium vegetable broth

SPICE MIXTURE - premix and add to taste

1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 parsley
1/4 teaspoon yellow mustard
1/4 teaspoon thyme
1/4 teaspoon turmeric
1/4 teaspoon paprika
Salt and pepper

INSTRUCTIONS:

Place the onion in a soup pot over medium heat for about 7 minutes. Add water 1 tablespoon at a time to keep the onion from sticking to the pan. Add garlic and saute for another minute. Add the rest of the ingredients. Bring the pot to a boil over high heat, then reduce heat to medium. Cover and cook on medium-low until vegetables are tender. Stir occasionally.
